Start making fresh tempeh at home! Tempeh or T.P.S. is one of the Indonesian traditional foods full of protein made by fermenting soybeans with the Rhizopus Oligosprus culture mold spores. It is high in nutritional value, providing nutrients such as Protein, Riboflavin, Magnesium, Phosphorus, Copper, and Manganese. It is also low in Cholesterol and Sodium. If you live in Indonesia, you can buy tempeh starter easily. In the USA, buying the starter spores can be a bit difficult; however, to make tempeh is not too hard.

A meatless choice, great for vegans or those looking for a healthy probiotic alternative for an animal-based diet. Cooks up like 'bacon or steak' when sliced thin and fried. It is recommended not to eat tempeh products raw. Soy should only be consumed after fermentation and not raw. The ragi tempeh spores will break down the soy into an easy to consume the product.

Tempeh Starter spores (Ragi Tempe) are grown on a pure vegetable nutrient (rice). 2 grams(1/2 tsp) of inoculum tempeh / 1 kg(2.2lb) of dry soybeans or 1 teaspoon full of inoculum tempeh / 2.5 kg(5.5lb) dry soybeans or 1 tablespoon full of inoculum tempeh /10 kg(22lb) dry soybeans

Use the cooked T.P.S. cakes as a replacement for meat in many recipes from tacos, hamburgers, and our favorite... the grilled Tempeh Reuben with raw sauerkraut!

One kg of dry soybeans prepared as directed will make 1.5 kgs of tempeh. Preparation time is less than 2 hours. Incubation time is about 24 hours at 85 F - 89 F (32 C). Kept cool and dry, Culture (starter) has a 12-month shelf life at full potency if kept dry in the refrigerator, and years if kept in the Freezer. Usage of tempeh starters ratio: 1kg soy beans: 2 grams starter 1 tablespoon vinegar.
